Still- Exactly as it was in the barrel, smooth and still.
Queen, 2016 Reserve, 9.0% - Drought year. Dense, nutty, dry. A touch of fruit and a hint of caramel. Late season blend, 37%wild seedlings. Fermented in oak for one year.
Lucia, 2017 Reserve, 6.9% - Low acid, luscious late season blend of wild and heirloom apples including Northern Spy, Roxbury Russet, and Gray Pearmain.
Sparkling - Bottle fermented with native sugar, on lees
Queen, 2017 Reserve, 7.5% - Low acid, a touch of residual sweetness. A late season blend of wild & heirloom apples including Roxbury Russet and Gray Pearmain. Bottle fermented with Maine maple syrup.
Zuzu, steeped in hops, 2017, 6.9% - Piney and grassy. Juice from 40 wild apple seedlings, fermented in oak for 11 months then steeped in hops. Subtle hop influence. Bottle fermented with maple syrup. Angus’s grandfather and great aunt picked the hops for us. Merci, Aline et Bernard!
Pips, 2017, 6.9% - Classic cider. Light, dry, and tannic with subtle notes of earth and herbs. Juice from 35 different wild apple seedlings and 16 heirloom varieties. Bottle fermented with maple syrup.
Dahlia, 2016, 8.4% - Drought year. Tannic, complex, earthy, bone dry. 64% wild seedlings. Fermented in oak for nine months. Bottled fermented with Maine honey. Expect light sediment. Thank you, Charlie & Annette for letting us pick your trees for this awesome blend.
